Buttermilk Fried Chicken

Not an everyday adventure, it feels good once in a while to fill a big ass pot full of oil and deep fry stuff at home. On buttermilk biscuit day, I put some of the buttermilk aside and added it to some chicken parts I picked up at Superstore. I let the chicken soak in buttermilk for the day and prepared a  flour rub of  paprika, mustard powder, salt, pepper, turmeric and garam masala.

I rinsed the chicken before going back into a wet bowl and then into the dry bowl. After everything was coated, it was time for the hot oil bath. Being careful not to scald any important parts, I gently placed the chicken away from me and let it cook for 12-20* minutes depending on the piece. Trying to avoid burning my tongue, I let a few pieces cool before digging in. The chicken was moist and crispy and that’s exactly what I want when dining on fried chicken.

*Even if the exterior looks perfect, don’t forget to give it a check with a thermometer so you know you’re around the 165 mark.
