Upper Crust Cafe & Caterers Q&A – Edmonton, Alberta

Open in 1986, with a a goal to become a popular neighbourhood cafe where the guests would be offered tasty, eye-pleasing food in a friendly, unpretentious atmosphere, the Upper Crust is located just north of Whyte Ave on 109th street. If you don’t have the time to pull up a chair, they also offer catering services and a deli where you can pick up breads, cheeses, salads and desserts. A very local establishment, they state – we believe that the food we serve is only as good as the fresh produce we begin with. For this reason (and because it seems only right to us that we should support our fellow Edmontonians) we purchase from local producers whenever possible. Now let’s get to the questions!

How would you classify your cooking style?
My style of cooking is similar to my personality…I like food and tend to experiment when I can

Who taught you how to cook?
I am constantly learning from my peers, I don’t give myself any boundaries

What are 5 kitchen ingredients/tools you cant live without?
I feel my knife, thermometer, tongs, an open mind, and fresh ingredients are valuable

When did you realize that this was your passion? And do you have any passions outside of cooking?
About ten years ago, sports

What is your biggest culinary guilty pleasure, something the foodies would maybe frown upon? (processed cheese slices etc..)
Everybody loves a classic like a big mac

When feeling below the weather, what comfort food do you create?
When under the weather I feel like making stews, soups

Is there anywhere you would like to live and work for additional culinary influence?
If possible I would like to live on the east coast be around the water and get to work with fresh fish and all products from the sea

Are there any food trends on the horizon you would like to work with?
Seafood is one of my biggest enjoyments

Anything you want your customers to know, that they may never hear?
Just how much fun I have in the kitchen and the challenges that go with the job
