Zinc Q&A – Edmonton, Alberta

Simple Elegance, that is the tag line of Chef Omar’s newest creation Zinc. Located inside the gorgeous Art Gallery of Alberta, Zinc is Edmonton’s newest high end dinning destination. Taking its name from one of the key components in the building (others being Douglas Fir, steel, and glass), this 75 seat restaurant will be serving up everything from pasta to steak with a focus on local ingredients. After my sneak peek of both the gallery and restaurant (here), I had inquired with Chef Omar about answering a few questions and was happy to finally hear back.

How would you classify your cooking style?
simple elegance, keep the flavours true and clean, but present in a new interesting way.

Who taught you how to cook?
mom and grandma first, apprenticed with chef heinz eichmann

What are 5 kitchen ingredients/tools you can’t live without?
victoria knox chef knife, saute pan, cheese, eggs, garlic

When did you realize that this was your passion? And do you have any passions outside of cooking?
age 21 living in kelowna as a single guy, enjoying life and worked with chef heinz who showed me what passion looked like. I love my family, spending time with them and enjoying life, too short to waste.

What is your biggest culinary guilty pleasure, something the foodies would maybe frown upon?
plain potato chips

When feeling under the weather, what comfort food do you create?
home made chicken soup using the whole chicken and every vegetable in the kitchen.

Is there anywhere you would like to live and work for additional culinary influence?
my family and I have talked about france, waiting for my son to get older so that he can really enjoy the experience.

Are there any food trends on the horizon you would like to work with?
I am currently focused on sourcing local products. The word trend does not apply so much as life style fits.
