Cupcakes, Cake, & Icing

Given the responsibility to host a wedding shower recently, meant that Sarah was again given the opportunity to ask me for a bit of assistance. And by now, you know how difficult it is to convince me to help prepare food right. The gaggle of ladies broke down the food categories for who was bringing what, and besides providing the space, Sarah was to provide drinks and some sort of dessert.

I think that cupcakes are probably the only thing Sarah enjoys more than goat cheese, so I started bouncing cupcake related thoughts by her. By chance, she mentioned that the wedding colours were pink and brown, and I realized we could incorporate the colours into our cupcakes. Sure we could have easily made the cupcakes at home, but we opted for a Duncan Hines, Extra Moist Cake Mix. I really don’t know the last time I used a cake mix, but we figured it would somehow make the preparation a bit easier while we tackled other tasks.

At this point, we realized that Sarah didn’t own two cupcake tins, so we improvised with a round cake pan. Remember to watch the bake times if you do this, as the cupcakes will bake considerably faster.

As you can tell, the colour worked out just fine. From my previous experience, I’ve learned to go heavy on the food colouring as it will soften considerably once mixed in. The icing was very simple, and offered a perfect chocolate balance for the white cupcake base. With the increased price of custom cupcakes and cakes, why not take the time to make something at home. I promise it will be just as tasty, and your effort and love will surely shine through.

Duncan Hines Cupcakes
Add 2tbls of oil & 3 egg whites to bag mix.
Mix food colouring with 1 1/3 cups of water.
Combine, and mix.
Bake at 350, for 20-40 minutes (depending on pan).
Cool on a rack for at least 30 minutes.
Eat or cover with icing.

Chocolate Icing
Sift 2 3/4 cups of icing sugar with 6tbls of cocoa.
Add 5tbls of milk, 5 tbls of fat (butter,shortening) 1tsp vanilla.
Mix. Thin with additional milk if not spreadable.
Bag, and Ice.
Chase around friend, loved one, cat with dirty chocolate hands.
Wash.
