Roasted Chicken Thighs

Ever make a dish so good you can’t believe it was so simple. I bought an entire package of chicken thighs at Superstore and gave them a quick hour marinade in honey, olive oil, Dijon mustard, salt and pepper. I put them on a foil lined tray and into a 450 degree oven. 20 minutes in I gave the tray a spin and continued cooking for another 20. That’s it. Seriously. So f’ing simple.

I burned my mouth on chicken fat and excitement as I consumed 5 thighs before taking the time to remember to pile the rest and snap a photo. Do it!
