While wandering the frozen seafood aisle at Superstore a few weeks back, I noticed a packaged of baby octopus. With a price point under five bucks, I figured it was a worthwhile addition to my cart. After a few weeks in the freezer, I came up with a simple plan. I’ve been watching people cook proteins on their Baking Steel’s lately, and I figured why not the octopus. So I pulled together a marinade of lemon juice, olive oil, red chili flakes, salt, pepper and a good hunk of fresh thyme.
After a few hours, I set my baking steel on the top rack in the oven and cranked the broiler to really f’ing hot. 30 or so minutes later, I tested a few pieces for timing and decided 5 minutes and 30 seconds was perfect. So I dumped the rest of the kidlets onto the steel and waited. I sliced some fresh lemon for that acidic squeeze and prepped the flaky salt and olive oil to finish.
The octopus came out of the oven with a beautiful purple colour and looked perfect. A quick bite, and before you know it, I’d eaten the package. Simple, delicious, and really easy peasy lemon squeezy.
I love my baking steel for bread and pizza, but cooking proteins on it takes my appreciation to a whole new level.
