Porchetta Di Testa – Round 2


It’s been awhile since my last pigs head porchetta, so a few weeks back I sent Acme Meat a note requesting a pigs head. Once home, I cleaned up the pig with a quick shave and wash before deboning the head and going through the motions of turning this into one beautifully tender and deliciously porky dish. If only I’d remembered to use cheese cloth before vacuum sealing.



I’ll queue everyone up outside my patio…I know you’ll all be rushing over to try it.
